SIMPLE GRANOLA


I have always loved granola! I used to love eating the boxes of granola that you buy in the supermarket before realising how much sugar and additives are hidden in those packets. Looking back, I thought I was being healthy but all that hidden sugar was actually feeding my sugar addiction without me even realising. When I started making my own I realised that it really didn't need loads of sugar to taste amazing! Not only is this recipe extremely delicious, it is so, so simple to make and, unlike shop-bought granola, you can control what you put into it. It makes a really satisfying breakfast that is full of fibre and healthy fats to keep you going all morning. I love making a batch once a week and having a jar of it on hand to make a quick breakfast or snack on a handful when I need a pick me up. This particular granola is gorgeous with some coconut yoghurt or and some fruit and if you like it a little sweeter you could add some raw honey when serving.

 

INGREDIENTS


4 cups oats

3/4 cup plant-based milk (I used coconut)

2 tbsp coconut oil (melted)

1 tbsp maple syrup

1.5 cups mixed nuts (roughly chopped - I used almonds, walnuts and hazelnuts)

1/2 cup pumkin seeds

1/2 tsp ground cinnamon


If you don't have a measuring cup then a small coffee cup (around 250ml) will work too.
