ONE-PAN CHICKEN THIGHS WITH ROASTED CELERIAC


If you are looking for an incredibly simple but delicious weeknight recipe that requires just a few ingredients and very little washing up then this is the dish for you!! It can be prepped in under 10 mins and the oven will do the rest - how great does that sound!!


The chicken thighs are a great source of protein - just be sure to source good-quality chicken. The celeriac (celery root) is loaded with antioxidants, a wide variety of nutrients including vitamin K and is a great source of fibre! The mix of the garlic and spices in the marinade gives the celeriac such an amazing flavour!


Healthy, indulgent and completely satisfying! Serve with a colourful side salad or some green veg to create a balanced meal. This recipe also works really well with potatoes instead of celeriac.


 

INGREDIENTS


4 large (or 8 small) good-quality skin-on chicken thighs

1 medium celeriac

4 tbsp extra-virgin olive oil

2 tsp dijon mustard

Juice of 1/2 lime

2 medium garlic cloves

1 tsp smoked paprika

1/2 tsp cayenne pepper

Salt/ pepper
