
This salad will change the way you see kale!! It is flavoursome, creamy and sooo good for you. Kale is a dark leafy green vegetable and one of the most nutrient dense foods on the planet. It is overflowing with antioxidants, vitamins and minerals to keep our bodies healthy and feeling good. If possible, try to buy organic kale as it is more susceptible to holding pesticides. As a healthy fat, the avocado helps us stay fuller for longer whilst also promoting glowing hair and skin - whats not to love?! Whilst there are benefits to eating kale both cooked and raw (I like to include both in my diet), this salad is raw so we will be getting the maximum amount of nutrients that otherwise might be reduced by heat - and for all the ladies out there, this is a great thing to be eating in your ovulation phase to help detox excess oestrogen and prevent PMS symptoms.
I love this with roasted wild salmon or as a base for a lunch box salad.
INGREDIENTS
200g kale (remove the stalks, chop and wash well)
1 avocado
1 tbsp extra-virgin olive oil
Juice of 1/2 lemon
Generous pinch of good-quality sea salt
2-3 tbsp pumpkin seeds
