
Looking for a fabulous way to use up the cauliflower sitting in your fridge? Look no further! Turning it into cauliflower rice is such a great way to give it a new lease of life!! Its also incredibly simple too. Cauliflower is a cruciferous vegetable - it is a great source of fibre and is loaded with plenty of vitamins and minerals to get us glowing from the inside out.
This recipe makes a really nice alternative to rice if you fancy something a little lighter. It's a lovely way to increase your intake of veggies. Serve it with a curry, throw it into a stir-fry, or take it to a bbq as a simple nutritious side dish. You can make it as exciting as you like by adding your favourite herbs and spices.
INGREDIENTS
1 medium cauliflower
1 tbsp extra-virgin olive oil
2 garlic cloves (minced)
2 spring onions (finely sliced)
½ lemon zest + a squeeze of lemon juice
Pinch of salt & pepper
Handful of parsley (finely chopped)
