
There is no denying that we all need comfort food!! Probably now more than ever and for me, these fish goujons are hitting the spot. Get ready to transform dinner time! Beautifully crispy on the outside, melt in the mouth in the middle and a flavour explosion with every bite! Not only that, they are incredibly nutritious! I have used oats as the ‘breaded’ coating which are full of fibre and flavoured with zingy lemon zest, garlic and fresh herbs. Along with the supercharged pea and rocket smash, it is a match made in heaven. Serve with some potato wedges or sweet potato wedges to make them even more satisfying.
Whilst I think these goujons work perfectly with haddock, you could sub for cod or another white fish if you prefer. Just look for the blue MSC label to ensure sustainable wild fishing. The key to getting them perfectly crispy is to process the oats as fine as possible and get the pan really hot before cooking.
INGREDIENTS
Goujons Pea & Rocket Smash
500g haddock loins 270g (2 cups) frozen peas
165g (1.5 cups) rolled oats 2 tbsp extra virgin olive oil
2 fat garlic cloves 1/2 lemon (juice)
Small handful flat-leaf parsley Pinch of sea salt
Zest of 1 lemon 60g rocket
3/4 tsp mustard powder
3/4 tsp sea salt
A few grinds of black pepper
2 free-range/organic eggs
1 tbsp coconut oil (to fry)
