
If you've never made your own hummus then you must!! It is the ultimate fuss free recipe that can be thrown together in seconds using only a few ingredients. Once you make it, you will never buy it again, seriously - not only does it taste delicious but it is far more cost effective and you can be sure that it is free from preservatives and additives. I love keeping a jar of it in the fridge, ready to dunk in some carrot sticks when I need a snack, add a dollop to a salad, or use as a filling on a baked sweet potato. It also looks very impressive as part of a table spread when entertaining friends (obviously before covid!!). The butterbeans and tahini are a good form of plant-based protein and keep blood sugar stable between meals. Typically hummus is made using chickpeas but for this version I am using butterbeans which I think gives a really creamy consistency and taste.
INGREDIENTS
1 tin of butterbeans
1 clove of garlic (peeled)
Juice of 1 lemon
2 tsp Ground cumin
1 tbsp tahini
2-3 tbsp extra virgin olive oil (depending on preferred consistency)
Generous pinch of good quality sea salt (to taste)
