
I'll be honest I feel exceptionally fancy and domestic-goddess-like when I have my very own bottle of homemade almond milk in the fridge door ready to throw into smoothies, hot chocolates or make into a steamy bowl of porridge. For a long time, like most people, I assumed there must be some sort of laborious process needed to turn a bunch almonds into a beautiful creamy milk. But in fact this nutrient-packed nut milk only really requires two ingredients - almonds and water - and after soaking your almonds it can be made in under 5 mins!! Do-able even on the busiest of days!
Even if you consume dairy, nut milks can be a refreshing alternative every now and then to boost your diversity of nutrients and almond milk is full of antioxidants and vitamin E to keep our skin healthy - who doesn't want that!!
Apart from being incredibly delicious, making your own almond milk is a sure way of avoiding the unnecessary sweeteners, additives and flavourings that are often found in shop-bought milks.
INGREDIENTS
3/4 cup almonds
4 cups (1 litre) cold water
1 medjool date (optional)
1 tsp good quality vanilla extract (optional)
If you don't have a measuring cup then a small coffee cup (around 250 ml) will work too.
DIRECTIONS
MAKES: 1 LITRE TOTAL TIME: 5-10 MINUTES + SOAKING TIME
