Happy Easter!! What better way to celebrate the sun shining, the abundance of joyful daffodils and a 4 day weekend than baking up some yummy goodness. Here are 3 of my favourite Easter recipes that are both nourishing & indulgent and will have you glowing from the inside out.
Hot cross buns are traditionally eaten on Good Friday but there are no rules here so you can eat these pancakes as many times as you like this weekend! Trust me, once you taste these you will want them on repeat... I will definitely be enjoying these with an iced coffee in the sunshine this morning! Would Easter really be Easter without a plateful of chocolate nests sitting on the kitchen table proudly? I don't think so. These little bundles of joy are a deliciously healthy take on the traditional chocolate cornflake nest cakes. Unlike the traditional kind however, my chocolate nests are loaded with antioxidants, healthy fat and fibre to get us feeling as vibrant and beautiful on the inside. They are perfectly indulgent and fulfil all of our chocolatey needs. They are incredibly easy to make and so much fun, even the little ones can get involved! PINK GRAPEFRUIT & OLIVE OIL CAKE
With much of the focus on chocolate this weekend, this cake makes a refreshing change! This zesty, fresh pink grapefruit & olive oil cake is the perfect addition to any brunch spread or alfresco afternoon tea this Easter. Although it absolutely doesn't taste it, this recipe is gluten, dairy and refined sugar free. For a cake filled with so much goodness it is incredibly light and moist.
